@ Rosenda - I have never tried to make chilaquiles with flour tortillas. Since I have run out of corn ones I may try it today... ^_^

@ Jervon - Get your cooking thing going! I am really bad about cooking for myself, so usually if I cook for at least one other person it gets me motivated to try new stuff.

@ Starla & mill d. sade - thanks for the healthy apple recipes!!! i love apples

@ Temba - I will have to try that casserole. I am really bad about making lunch to take to work and usually just starve all day. That sounds pretty tasty and easy.

I love the creativity. Yes tonight I made chilaquiles. It was small and basic.

I cut up the flour tortillas, toasted in a pan with some butter (veg oil works good too) on low til they get a little brown and crispy, added a couple of beaten egg, some pico de gallo salsa I made yesterday, and when it was done, it was a such a nice fast dinner with a glass of orange juice. You can tell I have not been to the grocery store yet.

Apple Thingys

Get some better, or margarine. ..I've tried it healthy and it don't taste right unless it's butter or margarine. ..grease an old skillet with 1 teaspoon.
Peel and chop 2-4 (or more) apples. Drop in skillet, sprinkle with as much sugar (enough to caramelize) white and brown if you have it. Add in cinnamon. Cook on low-med heat until apples are as soft as you want 'em and sprinkle some nutmeg if you have it.

Popcorn stuff
(Popcorn+bowl)(caramel+chocolate)/let dry= delicious snack

Chickenstrip salad.
Cooked chicken strips cut up (or just smaller), big chunks of tomato, mayo for dressing and romaine lettuce.

Healthy Bachelor's Casserole

Of course this is my own invention with the name I gave it. One of the many days when I was broke, I looked and decided to use the brown rice and canned tuna in my cabinets. And because my gas hasn't been on in forever, I even did it all in the microwave. (Okay, I think that might be a bit too much information--hahaha)

Not only is brown rice more nutritious than the starchy, white variety that we are all familiar with, but brown rice has a naturally nutty flavor.

>canned chicken or turkey (I actually used tuna, but the nuttiness of the rice blends in better with poultry.)
>brown rice
>cajun seasoning
>sea salt

Boil the rice.
Add the seasonings and sea salt.
Turn down the temperature to half-power and cook covered for 15 minutes.
Once the rice has absorbed all the water, it is ready.
Mash the meat so that it will easily blend with the rice.

For me, it makes a really convenient lunch pail feature.

Omigod Daniela, Chilaquiles are AWESOME. YUM. You know, what you said about ordering them in a restaurant is SO true. Actually, up until I was in my teens, I used to think the same about burritos and tacos. Burritos and tacos was something you made at home with leftovers, because Mom just wanted to do something fast or had not gone to the store to do full on grocery shopping yet. Ya know? I remember being kind of puzzled at certain so called Mexican restaurants when I was young and seeing those on the menu. Little Rosenda went "huh?". It took my father a long long time to even be okay with the idea of going to a Mexican restaurant in the first place, because his standard of Mexican food is based on my Mom's cooking, her Mom's cooking, and her sisters' cooking. (Which is all quite wonderful, I must say).

Do you know how tripped out I was when I actually ordered Chilaquileas at this diner near a sort of "hip " neighborhood I used to live in? The dish showed up and it was soooooo bland and I grumbled to my boyfriend at the time "Damn, I could have done better at home for $1.25. Grrrr." :)

Hey, have you tried to make them with flour tortillas? You can do it while they are still soft and fresh too. You just have to cook them in oil or butter or whatever until they get a little crispy and toss in whatever. It's soooo good.

Did I ever mention the 3 great Food Equalizers?

Tortillas
Cooked Rice
Cooked Pasta
Cooked Potatoes.

You have any of those leftover and you can pretty much toss in whatever you have in the refrigerator that still tastes okay and you've got a meal.

Really, think of it, cut up any of said items. Warm them up (either in microwave or in a pan with a little of oil of your choice), cut up whatever leftover things you have that taste good, add some seasoning if you have it, add some cheese if you wish or some type of sauce you like, and voila! Dinner!

Am opening my ears to the next food discovery here on THE LAZY FOODIES NETWORK. :)

Chillequilles can be made lots of ways.
They are a working class Mexican dish consisting of stale corn tortillas and whatever else you want with it. I know this sounds gross but trust me, it's actually really good.

Never order this at a restaurant where they try to make it seem fancy and charge you a million dollars. You can make your own easily at home for practically nothing, that's the point of chillequilles.

There is a technical standard way of making chillequilles but I forgot that recipe. This is what I made this weekend:

Broke Chicken Chillequilles

1 frying pan that has a quarter of an inch or so of vegetable oil in it (more than you would use to fry an egg, less than you would use to deep fry chicken wings)

6 stale corn tortillas (they better be hard as hell!)

4 eggs

1 jar of salsa verde sauce or green tomatillo sauce (green sauce)

1-2 teaspoons of sea salt (you don't really need it but I am addicted to salt)

1-2 teaspoons of pepper

some grated parmesan cheese

2 chicken sausages or any sausage type meat you have around

2 teaspoons of red chili pepper

Heat up that pan of oil until it is super hot/about to start snapping at you.

Take your six stale ass corn tortillas and rip them up into pieces that are smaller than a chip but not smaller than a quarter. That's too tiny. Use your best judgement.

Drop those tortilla chips into the oil.

While they are browning (should be covered and coated with oil), chop up your sausages into bits that you won't mind swallowing.

Turn back to the pan and move those chips around. Don't burn them but make them brownish and even harder than they are until most of the oil is gone. Then lower the temperature to almost off and pour in about half that jar of the chili verde sauce.

You want the chips to absorb that green sauce and get soft and full of flavor. Mix it around a bit.

Add your salt and pepper to taste.

Turn the heat back on to medium as the soaked chips seem to be a little dryer, pour in some more of your sauce but not all of it along with your sausage bits. Quickly mix some parmesan cheese.

Stir that around until sausage bits seemed cook and cheese is melty. Now add your eggs. Push all that mess to the center and let it cook.

Pour the remainder of the sauce on top and sprinkle your chili pepper on it too plus some more parmesan cheese.
Let that get melty but not too melty.

Taste it and if it's good, you did it right.

If you want to be experimental, you can cut up some pieces of apple in there and add towards the end. Suprising but tasty mix of flavors.

Serve with side of black beans.

The Vio, I must officially thank you for the Tofu Friiters. OMIGOD THEY ARE SO GOOD. Yum yum yummy yummm. Excellent call.

I had some leftover goats milk plain yogurt, and I mixed in some dried mint, salt and pepper. It was so nice with the fritters. Yum. Happy camper. :)

Oh DEFINITELY Daniela. Excellent. Works with lemons too. In fact, I grew up with an avocado tree in my back yard. And my parents have a lemon tree in their backyard. Niiiiice. I have done that avocado with lemon and salt over the kitchen sink for dinner lots of times. Eating the avocado out of the shell, after taking out the big seed. YUM. You know what else is good, Daniela?

Make a sandwich with any bread (those fresh and cheap bolillo type rolls at the market are awesome for this), sliced avocado, and any kind of cheese you like, put on a little bit either mayo or mustard or hummus or anything else like that on it. YUM. My friend Lorena did that once, I brought in avocados that my aunt Mary brought from her trees, and Lorena went to the little market near work in Boyle Heights and got the rolls, some soft queso fresco. OMIGOD IT WAS SO GOOD. She even brought some limes and salt to squeeze on.

Jervon, when you buy one, if it's hard it's not ripe yet. No problem, just put it in a paper bag and stick it in a drawer for a couple days until the avocado is soft.

If it's soft when you buy it, go ahead and eat it. It's ripe!
