@ rosenda - hehehehe. That's awesome. I made something very similar to hobo soup the other day. It was basically the dregs of liquid from previously eaten tomato soup. kinda gross. but it's PAY DAY TODAY so its like steaks n shit tonight. jk maybe a turkey burger.

ok so here goes nothin':

one can of lentils
a generous helping of shiracha or any kind of hot salty sauce
cilantro and onion to taste.

mix in a small bowl and enjoy with crackers, tortilla chips or pita!

Your message was cool and hilarious.....it made me think of something my father and mother told me when I was a little kid. Back during the depression, if a homeless man went into a restaurant, he knew that the two things that were always free were crackers, ketchup, and hot water. So Hobo Soup was a bowl of hot water, stir in as much ketchup as you wanted to taste (like kind of a sweet tomato soup) and then crumble in as many crackers as they would give you. Voila, The Hobo Special.

Mlle d. Sade, I'm anxiously awaiting your sweet potato pie recipe, I'd love to try that this Christmas! In the meantime, while I wait, I'd like to share a lil' something something I do to satisfy my sweet potato craving. It's really simple, I call it a "Sheedy's Sweet Potato with the Works" Just get a sweet potato, pop it in the microwave for about 8 minutes (or until soft). When that bad boy comes out, cut it down the middle as if it were a regular baked potato and then "go to work"...
Add butter (not margarine, it ain't as good), then about a teaspoon of ground cinnamin, 2 tablespoons of brown sugar. Mix it all in. And lastly, just a touch of nutmeg. DO NOT add more than a touch because the nutmeg could make your potato too bitter. Then once you've added all those ingredients, top it off with a lil' whip cream...if you really wanna splurge, add a lil' ice cream with the whip cream. My mouth is watering right now thinking about this. Mmm, it's too good. LOL

It's 9:30 in the morning and I'm talking about sweet potatoes. SMH..lol But try it ya'll and let me know whatcha think....

An easy comfort food is layered enchiladas. You can even do it with canned beans, in case you don't have any leftover home cooked ones.

Get as large a baking pan as you have (anything from the square pan to the big 11 x 13 rectangular baking pan), and get a package of tortillas from the market. I like to do this with flour cause they get so soft but it's good with corn tortillas too. You could even do a small casserole in a regular pie pan too.

Get a large can or two of refried beans (depending on if you have smaller or bigger baking pan), vegetarian or regular, or a can of regular cooked beans, and puree them yourself in the blender. Get at least 4 cups of grated cheese (whatever kind you like). If you have any cooked leftover meat or that soy meat substitute or baked tofu, you can use that too. Make sure you have at least a cup or two of this. And if you like spicy, get a can of green chiles or even the hotter chiles or even just a cheap can of the green sauce and or red sauce, that is good too.

You basically put down one layer of tortillas (cut them to fit the size of the pan), then a layer of beans, then some grated cheese, then another layer of tortillas, then layer of either meat/tofu/soy or if you prefer, a layer of whatever cooked vegetable you like (spinach is good and I've also tried the green chile chopped up), add some cheese, then another tortilla layer.

On the top layer pour over your favorite canned sauce, and more cheese.
Bake in the over at 300 - 350 degrees about 30 minutes, until it looks warmed and soft in the pan and cheese is bubbling.

You can also do this sort of Italian esque. Use a jar or can of pasta sauce instead of the hot sauce and chiles, and you could use mozzarella or ricotta cheese instead of cheddar or jack.

Enjoy! This comfort dish lends itself to much experimentation and or whatever is in your refrigerator. ;)

thanksgiving was so fun i really like to cook on holidays because you can just make a bunch of things just for the sake of it making you feel like you did when you were a kid and every holiday was such an adventure yadda yadda yadda it was only my boyfriend and i which is great because he'll eat almost anything i make and usually like it and like daniela said, its always easier to be creative when your cooking for someone else... i made tofurkey FROM SCRATCH!!!(halla!) and it was so good it actually had the texture of meatloaf but i was just so happy that it worked out and we didnt have to spit it out and search for a diner dinner it took alot longer than i thought that it would to cook about 2 and a half hours i used
4 blocks of tofu,1 package of "crumbles" (its like a soy ground that crumbles like meat),1 can vegetable broth, wheat germ, bread crumbs,small kidney beans,minced garlic and 3 eggs, (u can use other/more spices to your taste) i mixed it all(except the vegetable broth) in a large bowl...well i put the eggs in last and then mixed again covered with plastic rap and mushed it all down tightly and then removed the plastic; oh yeah, i also added powdered chicken broth packs too! then i flipped the bowl over to put the mixture in a baking pan i kind of "molded" the mix into a..well a meatloaf shape i added cut onions on top and i put potatoes and carrots around (like my mom would do) then i poured half of the broth in the pan cooked it in the oven at 350* for a total of 2 1/2 hours i took it out halfway to add the rest of the broth...its done when its hard and has no movement when gently shaked also it is good when most of the broth is gone(well this was my first time making it so i guess for me it was good when the broth was gone) add gravey i made mushroom gravy:) it was so effing good and since it was in the shape of meatloaf it was an easy progression twards sandwiches BONUS!!!:) i agree with rosenda i love cheep mac and cheese i got two boxes of the 79cents brand and one package of the 99cents cheese slices followed directions on the box but add broken cheese slices and mix! i put it in a tin and baked it you dont have to though it was equally as good straight from the pot....mmmm pot...but i regress! but i put it in a small tin and baked bcause i wanted to have all the dishes done before i caught the itis and i figured if i'm using the oven i might aswell USE THE OVEN but yeah banging mac!!! i also made turnipe greens they werent stellar and my stuffing...well kind of sucked but all and all it was pretty good eating! i made a corn bread sweet potato pie for desert ...... i'll save that recipe for another day but it was so easy and so good!!! hey daniela you rule!!!!!xoxoxo gia

* Now that it's over, what are you going to do with all those leftovers? As lunch type items for work? Late night snacks? Give us some ideas! The weirder the better.

* How do you make delicious mac and cheese for practically no money???? (this is more a personal question)


My mom was queen of the leftovers, mainly because my dad would feel the need to get a big 15 pound turkey even though it was just me mom dad and my sister. I have to say, Mom got creative. But after a week or so I'd get burned out, no matter how good the turkey sandwiches, turkey tacos, turkey chilaquiles for breakfast, turkey noodle casserole, turkey and vegetable soup, turkey fried rice, turkey hash, turkey burrito.

My sister and husband cooked and had everyone over for Thanksgiving this year. Quite fun and tasty, me and her sister in law and my nephew all brought a dish to add to the huge feast.

Usually I am pretty tired after all that, so I'll eat those leftovers for breakfast, lunch dinner and they are done within a few days that way. If it was good for dinner then its good any other time of day. My niece to make jokes about that years ago. "Aunt Rosenda, you'll eat anything for breakfast." My dad used to piss me off by saying loudly "Rosenda, you sure have STRANGE eating habits."

Only when I'm too sleepy to make breakfast, Pops, only when I'm too sleepy. ;)

Mac n Cheese questions: Grrrrrl, get thee to a dollar store. My late great friend David Clanton used to say to me, "Honey, as longs the 99 cent store is open, I don't ever have to go hungry." :)

Seriously, a box of prepackaged mac and cheese (even the cheap brands), and stir in a can of tuna. I'm not kidding! It's tasty! If you happen to have some onion and garlic and leftover vegetables in the refrigerator (or any other type of cooked poultry or meat), chop that up in small pieces and stir that in after you've cooked the mac and cheese.

If I remember correctly, my late friend used to call that "Deluxe Macaroni." :)

Now, if you don't want to do the 2 for a dollar cheapo boxed macaroni and cheese sauce, Daniela, the other cheap version was told me by a coworker years ago.

Bag of plain generic macaroni (or any other pasta you have at home).
Can of plain cheese soup.

Boil the macaroni or pasta until done, strain, then add can of cheese soup.
She referred to that as "the white trash version of macaroni and cheese."

And you can do the same adding in whatever you have left in the fridge chopped up in there too.

One more after Thanksgiving weirdo leftover suggestion: (I did something like this years ago at my old apartment, after my roommate and I had her family over for holiday dinner): warm up the dressing in the microwave, cut up some of the leftover turkey and or ham, put it on top, then either fry or poach a couple of eggs. Yes it was good.

And don't tell me I'm the only one who has eaten a bowl of mashed potatoes and gravy for breakfast the day after Thanksgiving. *

Jervon, just get ingredients for one dish you know you'll eat. Start off easy.
That's how we get overwhelmed with the whole cooking thing. I've done that before.
