ALSO remember to UP your vegetable intake. Alot of new vegetarians end up just eating a lot of pasta and rice. On a mostly carb diet like that, you WILL gain some lbs and the whole purpose in staying healthy is defeated. Here are my favourite veggies that are FULL of protein and iron:

Kale
Spinach
Portabello mushrooms
shitake mushrooms
mixed greens

pretty much any vegetable that is dark in color.

the transition from the chicken-and-shrimp-loving omnivore diet to a veg diet is easiest if you start omitting one at a time. Go Pescitarian first, and just take chicken out of your diet. When you have meat cravings, you'll just eat fish and it'll be easier. Then omit fish from your diet, and when you have meat cravings eat some faux-meat soy based foods (morning star and Dr. Pregers rock my life). When you decide to go Vegan, you'll already be used to eating more veggies so just omit the dairy and eggs.
Big steps like these are best (and most effectively) made on a gradient.

For all the meat-eaters that want to go vegetarian/vegan for the first time or back to their old veggie eating habits. There are a few tips:

1. Start Slow and Tame Yourself- Try Not Eating Meat On A Weekly Basis. Mark your calendar. Challenge yourself. Say right now "Ok, I will not eat meat for one week!". Then do it. You'll notice that after the second week your craving for meat will disappear completely. Replacing meat entrees with noodles help here are my top picks to start you off 1.Ramen noodles Price: About 4 for a $1.00 2. Lipton's meatless pasta stir fry's Price $1.99 (but its extremely fillling 3. Kraft Mac and Cheese (yeap its the best classic) Price: $0.59 per box. These and of course our vegetables and fruits. You'll learn the tricks of the cooking trade in time.

2. Comfort Yourself- Most people fail at being vegetarian/vegan because they begin in lose a sense of reason. Read a book that you are sure will convince you that you are doing a great deed (which you are). I recommend Skinny Bitch by Roy Freedman

3. Back Yourself Up-Yeap get some vegetarian/vegan friends. You can start with me. Come over anytime ::giggles::I'll cook you something you wont know the difference.

4. Support Yourself-Join vegetarian/vegan causes, just like this group. They are extremely helpful, plus you'll know that you are not alone in improving your eating habits. There are also actual vegetarian club groups that meet up like once a week or something and lead discussions in New York (although I am not to sure about other places). Most colleges have vegetarian/vegan aid clubs too. IF NOT. Then start one, what are you wanting for ::smiles::

5. Lastly Take Your Vitamins. Gummy Vitamins. Flinstones. I know it sounds lame but living in the city any and everyone (meat-eater or not) will eat a lot of processed foods. Think about it the average New Yorker eats out about three times a week. And while there is proof that a vegetarian/vegan diet is healther than other eating habit alternatives, however it does time for your immune system to get stronger. Your skin is a another great reason to take vitamins, it is the first organ to react to your bodies most drastic change.

6. Upgrade- Now what do I mean by that. Ok, its hard to go from carnivore to vegan over night (being vegetarian much more likely but even that has its downfalls). Its important that you give your body a chance to adapt to you new eating habit, remember most people have been eating meat for at least 8 years before they decide to go vegetarian.

So I would suggest being vegetarian for at least one year before going vegan. But believe me it will feel great when you do. Plus by that time you will know all the food hotspots to say the least. ::smiles:

I'll let you know if I think of more!!!
